Vinification:
The grapes are harvested to 18kg boxes, completely destemmed and fermented in
temperature controlled stainless steel vats, followed by a long maceration period, and finished with a gentle pressing. Malolactic fermentation made in used oak barrels
Ageing:
12 months in used French oak barrels
Gastronomy:
Serve at temperature between 16 and 18 ºC. Red meats, game and cheeses. Partridge stuffed with truffle duck liver
