The grapes are hand harvested into 18kg boxes and gently pressed after a short skin maceration. Fermentation in used French oak barrels

Ageing
12 months on the lees in used french oak barrels with “batonnâge”

Gastronomy
Serve between 12 and 14 ºC. Fish, shellfish and white meats. Smoked fish, foie-gras and meat carpaccio. Soft creamy cheeses

Tasting Note
Delicate and fine aroma, subtle smoky notes along with almond complemented by white fruit. In the mouth it is ample and creamy, the fine bright acidity brings lightness and life to the ripe white fruit and honeycomb flavors.

Serve between 12 and 14 ºC. Fish and seafood. White meat and Smoked fish, foie-gras and soft creamy cheeses

Tasting Note
Delicate, fine and complex aroma, with minerality. Ripe white fruits, peach and apricot, caramelized citrus and peaches Toasted caramelized nuts and honeycomb flavors. In the mouth it starts ample, with a very creamy texture balanced by a bright lively acidity. Stone fruit flavors with honeycomb, wet stone, caramelized fruit flavors. Long finish.

Ageing
Aged 6 months in used French oak barrels

Gastronomy
Serve between 10 and 12 ºC. Fish, shellfish and white meats. Smoked fish, foie-gras and meat carpaccio. Soft creamy cheeses

Tasting Notes
Yellow tones, with hints of green in the color. Complex nose, with fine fruity hints of peach, melon, pear and apple. Flinty, stony notes coming along with soft toasty aromas. Vibrant texture and freshness, evolving with a persistent finish, with spice.
